to be precise it is the capacitor C2 on the part list: value: 20uf/40uf. 20uf/40uf /500v
this capacitor is no longer used.
so how to make the change?
(perhaps by several capacitors)

The value is ambiguous? Is it 20uf or 40uf? I would imagine you would want to replace it with the same exact spec that was in there before.

it is marked 40uf/40uf/500v
on the capacitor as above.

you also need to know that the capacitor with 6 solder pads

the one in front is a 5000uf/25v on the C-J bom
which I replaced with a 6800uf /50v

So it looks like you replaced the original dual capacitors with individual ones. That should work.
Did you change the value of capacitor from the original 40 uF 500 VDC? If so, why?

I haven't changed any capacitors yet.
the photo of the conrad PV7 edit is not mine.
I still have the original 40/40/500v capacitor.
I would like to put the capacitors like the photo on the modification but I don't know how to modify the installation with the double capacitors then connect them in the right place

My understanding of dual capacitors (if that is what the original CJ one is) is that it is pretty much just two capacitors in the same body. You should be able to replace it with two equally rated caps (ie 40 uF/500vdc).
In the picture I see some other things being done there including caps/resistors (can't tell from picture) added, but perhaps that was just to free the components from the main board. Can't say. Also, they have a very different rated large cap on the right that they put in so I'm really not sure of how that was modified.

6 poles of which I will need 2 new capacitors in 3 poles
on the label of the original Sprague USA brand capacitor
it is marked: 20/20/40/40/500v
I have the choice of purchasing the 32/32/500v and 50/50/500v values.
what should I do?

I'm stretching beyond my electronics knowledge here, but can you substitute the more common 2 pole capacitors? Again, this is really beyond my knowledge base now and I'm worried that 32 and 50 uF is just pretty far off of specs. I don't know what that would mean for operation and safety.
I would maybe recommend emailing Digikey to see what they think about a suitable substitute. I've bought stuff from them for hard to find electronics.

Hola. In a power supply, it is very important to have the voltage value the same or more working voltage . The capacitance, if you use a higher value like 50uF instead 40uF, you can do this, but never lower a capacitance value.
